When you find yourself in New England, specifically Western Massachusetts, there is a sweet little breakfast shop in a town called Ludlow.
Evan’s Egg House is painted in pastel pink on the outside. Once you enter, it is packed. Tables are nestled close and even closer to the door, so everyone dining there knows you’ve entered.
I imagine this used to be an office space for a real estate agency or an accountant. Then when the restaurant owner took over (Evan?), they kept everything the previous office had, but built in a kitchen and a coffee machine. Even the fluorescent light emits a nostalgic feeling of being in an office with the hum of electricity in the ballast.
Evan’s does homestyle cooking with classic breakfast platters, omelets, or hash. Whatever you decide, do add a pancake. Sometimes a seasonal pancake is written on a large whiteboard at the back of the restaurant, from my imagination, a keeper amongst the office supplies left behind.
If one were to replicate this vibe as an aesthetic, it wouldn’t be the same. The fact that nothing was changed except for the kitchen makes their no-frills, all-American breakfast shine.
